Italian Marsala Veal

Ingredients

4 veal steaks
(125gs) 4oz prosciutto ham
3 tbs grated parmesan cheese
2 tbs plain flour
(60gs) 2oz butter
touch of olive oil
chopped Italian parsley
2 tbs Marsala
salt to season

Method

Cut each veal steak into two regular shapes. Beat lightly with a meat mallet to flatten.
Sprinkle with salt and coat lightly with flour, then fry in butter and enough olive oil to lightly coat  pan until both sides are golden brown. Finely chop ham and mix with parsley and cheese. Divide mixture into eight portions and put a portion on top of each steak. Sprinkle with marsala and continue cooking for a further 8-10 minutes. Remove from heat and serve immediately, pouring over excess pan juices.

Serves 4.

Memories

Italian marsala veal was always a favourite recipe for special dinner parties. It is not an Italian dish for big parties, which was mostly how Mama entertained. It was one of the first dishes I served up for intimate dinner parties with friends when I was first married. It never failed to impress. Simple but tasty.
